Pumpkins are for life, not just Halloween!

You know, I’ll be honest – Halloween has always struck me as a bit of an odd day. The huge overindulgence in sugary, over processed treats during this time doesn’t quite align with my passion for wholefoods.

But one thing I absolutely adore about Autumn is squashes and pumpkins! And it’s not just because you can carve whimsical faces into them and light them up with candles. Pumpkins are a true nutritional powerhouse with super health benefits. And, did you know they are classified as fruits in the world of science (bonus point if you can tell me another vegetable that’s actually a fruit)?!

Now, what makes pumpkins so fantastic? First off, they’re loaded with vitamin A, which is crucial for maintaining good eye health. Additionally, pumpkins are rich in antioxidants, those vital compounds that shield our bodies from coughs, colds and other illnesses.

But the beauty of pumpkins doesn’t end with their flesh. The seeds, often overlooked, are treasure troves of essential minerals like iron, magnesium, zinc, and potassium. They’re incredibly versatile, making them perfect for snacking, adding that delightful crunch to muffins and bread, or boosting your salads and porridge. Even granola and flapjack recipes can benefit from a sprinkle of pumpkin seeds. They can be used almost anywhere.

Rather than throwing that pumpkin flesh in the compost bin after carving those spooky faces, it can be transformed into some really tasty dishes, much like any other root vegetable. You can roast it, mash it, steam it, turn it into soup, or puree it. It’s a fantastic addition to curries, Sunday roasts, or even muffin recipes. Keep in mind that the bigger the pumpkin the less flavour it will have, so your carving pumpkins will be best for a recipe with lots of other flavours.
